Today I made homemade tomato soup. It was so good. And the sodium content was very very low compared to store bought canned tomato soup. More than 50% lower is sodium!
What you need:
1 small can of tomato paste (best quality) – or you can use fresh tomatoes cooked down and blended with an immersion blender. If you did this you need about 1 medium tomato per serving. I just used the tomato paste and bought the best quality.
2 tbsp Basil
2 cloves of crushed Garlic
Himalayan Sea Salt (to taste)
Fresh Ground Black Pepper (to taste)
3 cups water or less if you want a thicker soup. Eyeball it.
Splash of milk or half and half optional
How to make it:
Add all ingredients into a soup pot on medium high heat. Bring to a boil. Stir well. If you wish, remove hot soup from heat source and add half and half or regular milk to make the soup less tart and more creamy.
Serve with crispy toast, or grilled cheese.
Idea: Garnish soup with Parmesan Cheese or with cheddar Goldfish crackers for the kids. I tell the kids it’s Bubble Guppies Soup or Mr. Grouper soup. It’s a huge hit.
